Starting the weekend off with Banana pancakes this morning! My fav!!
This recipe is from my sister, Julia, and she taught me how to make this really healthy breakfast. I love it!
You need a blender or Ninja to make the pancake batter. This is for just one person and it makes a small stack of 5-7 pancakes. Sometimes I double the recipe and make twice as much (just for me) because I love them so much! So if you are really hungry, double it.
Ingredients:
1/2 cup rolled oats
1 banana
cinnamon
2 eggs
1/4 teaspoon baking powder
fresh fruit (I like berries and bananas)
honey or maple syrup to serve
To make:
In a blender or ninja, blend the oats to make flour. After the flour is ready add banana, eggs, cinnamon, and baking soda . Blend all together until smooth. Then let the batter stand for about 10 minutes to thicken.
Heat a skillet over medium heat with a little bit of coconut oil (or non stick spray) and pour to make pancakes. Make sure they are golden on both sides.
Stack a tower of pancakes and drizzle with honey with honey or syrup and top with fruit.
